Lunch On the Run: Deli Roll Ups




This lunch is brought to you today by my hips.  Yep, that's right.  Years ago when I joined Weight Watchers, I quickly learned that bread was the fastest way to use up your points before dinner even arrived.  Who needs bread anyway?  (Don't answer that)  Honestly, I really love these deli roll ups, as I refer to them, and eat them almost everyday for lunch.  I can eat a few of these and a banana in the carpool line and stay full until dinner.  My flavor of choice when it comes to the proteins is provolone cheese with Boars Head Buffalo Chicken but the key to these "rolls ups" is to stuff them full of veggies.  Tomatoes, spinach, avocado, etc.  The sky's the limit.  Just get creative and your hips will thank you later.

Cilantro Lime Rice

How many of you love a simple go-to side dish for dinner?  This cilantro lime rice is so fresh and pairs perfectly with seafood, chicken or steak.  We had it with tacos last week but I can see it going with this ever popular chili rubbed salmon with mango salsa or this spicy skirt steak.  I think the bright lime flavor tends to balance and compliment spicier entrees.

Also, I calculated Weight Watcher points for this so if you're on the program consider this your lucky day!  Servings: 6 // Serving Size 1/2 cup // 3 points per serving

***** Cilantro Lime Rice ************************************************************

// Ingredients //

1 cup basamati brown rice, uncooked
2 1/4 cup fat free chicken stock
1 tbsp. fresh cilantro, chopped
1/8 tsp. ground cumin
1/2 lime, juiced

// Instructions //

1.  Bring rice and chicken stock to a boil over medium-high heat.  Cover. reduce heat to a simmer and cook for 45 minutes.

2.  Add cilantro, cumin and lime juice and stir.
