Cilantro Lime Rice
How many of you love a simple go-to side dish for dinner? This cilantro lime rice is so fresh and pairs perfectly with seafood, chicken or steak. We had it with tacos last week but I can see it going with this ever popular chili rubbed salmon with mango salsa or this spicy skirt steak. I think the bright lime flavor tends to balance and compliment spicier entrees.
Also, I calculated Weight Watcher points for this so if you're on the program consider this your lucky day! Servings: 6 // Serving Size 1/2 cup // 3 points per serving
***** Cilantro Lime Rice ************************************************************
// Ingredients //
1 cup basamati brown rice, uncooked
2 1/4 cup fat free chicken stock
1 tbsp. fresh cilantro, chopped
1/8 tsp. ground cumin
1/2 lime, juiced
// Instructions //
1. Bring rice and chicken stock to a boil over medium-high heat. Cover. reduce heat to a simmer and cook for 45 minutes.
2. Add cilantro, cumin and lime juice and stir.
