I See London




Did you watch any of the Olympics this weekend?  We watched the opening ceremonies and let Luke stay up way past his bedtime.  His excitement was contagious and we had fun explaining the Olympics to him.  At night, I've been recording events so that he can watch them in the morning, particularly the swimming and the gymnastics.   I love watching him jump around the living room yelling "Go USA, Go USA, Go USA!"

Going Ons

Hi friends! I'm staying so busy these days but I've made it my personal mission to actually follow through on more of my "pins" from my Pinterest boards before summer is over.  What fun is pinning if you never actually put the ball into motion, right?

Here's a little peak at what's been going on in my house lately thanks to Pinterest!

Painting...lots of painting.  I chose Martha Stewart's "Gull" for our master bathroom and "Spring Melt for the bedroom.  I really love this inspiration photo I pinned a few months ago.  

Is anyone else excited about the Olympics?  I'll be curled up watching the opening ceremonies tonight.  I've always enjoyed watching the games, especially gymnastics and swimming.  And really, have you seen  these guys ladies?

Posh Pergolas











Summertime always makes me want to seek little spots of shade.  Aren't these pergolas the perfect retreat? I love how they define ordinary spaces and transform them into something really special. It's almost like adding another room to the house!  I love the ability to get creative with flowers too, whether it's with hanging baskets or vines.  Now all I need is a glass of peach tea fizz or an Arnold Palmer and I'd be a happy camper.

Lemon Poundcake


Darn you Starbucks. You're draining my wallet and it's not your coffee.  It's your delectable and utterly perfect lemon poundcake that my kids beg me for every time we're near you.  Apparently, Luke has acquired my penchant for all things lemon and Jett's pretty fond of it too.  Can you blame them?
I made it my mission to find a yummy recipe to answer their cravings and help save my pennies too.

Fortunately, I think I've got it! My little knockoffs have been prepared and devoured twice in the past week.

Unfortunately, my kids are also now addicted to your cake pops.  So, this won't be the last of our little love affair.



Ingredients:


      1-1/2 cups flour 
      1/2 tsp. baking soda 
      1/2 tsp. baking powder 
      1/2 tsp. salt 
      3 eggs 
      1 cup sugar 
      2 Tblsp. softened butter 
      1 tsp. vanilla 
      1 tsp. lemon extract 
      1/3 cup lemon juice 
      1/2 cup vegetable oil

       Lemon Icing: 

      1 cup plus 1 Tblsp. powdered sugar 
      2 Tblsp. milk 
      1/2 tsp. lemon extract
Directions:


    1.  Preheat oven to 350 degrees. 
     2.  In a large bowl, combine flour, baking soda, baking powder, and salt. 
     3.  In a separate bowl, blend eggs, sugar, butter, vanilla, lemon extract, lemon juice and oil with        an electric mixer. 
     4.  Pour wet ingredients into dry ingredients and mix until smooth. 
     5.  Pour into a well-greased 9   x 5 loaf pan and bake for 45 minutes. Or make in Petite Loaf Pan and bake for 21 minutes.
     6.  When loaf is cool, remove from pan and ice with icing. Slice into 1" slices. Serves 8

Meet Me in the garden

How does your garden grow?  Many of you know this is my first season with a vegetable garden and I'm excited to say it's been a success!  It's been quite a learning curve but it's been so fun for the kids and I this summer.

I'm using the All New Square Foot Gardening method and couldn't be happier with the results.  It's a really amazing technique that will work anywhere.  This being my first season, I didn't plant in every square foot because I was scared of biting off more than I could chew...literally!

We did plant a variety of tomatoes, cucumbers, peppers, carrots and herbs.  I even threw in a few flowers for visual interest.  In the fall I hope to do some landscaping around the actual beds and of course am finding lots of inspiration on Pinterest.  Feel free to follow my "Garden Frolic" board if you have a green thumb too.

Any tips or gardening advice is welcomed and much appreciated! I've got a long way to go.  Here's some more photos from the garden.

Pina Colada Cupcakes



Happy National Pina Colada Day!   Tuesday just got a lot more fun, huh?  I mean who doesn't love the coconutty goodness of a frozen pina colada?  And the song...need I say more?  These cupcakes are the perfect way to celebrate today and kid appropriate too.  Are you throwing a beach soiree or hosting a luau themed party?  These babies have you covered for dessert.  Or just surprise the family and soak up summer on the back deck and let the kiddos dig in!

I'd say they were a pretty big hit.  Hope you enjoy the day to the fullest!

For the cake...

Ingredients:


1 box classic white cake mix
3 large egg whites
1 cup pineapple juice (use this instead of the the water!)
1/4 cup vegetable oil


Instructions:
Bake cake according to box with the exception of substituting the pineapple juice for water.  Allow to cool before frosting.


For the frosting... *


Ingredients:


2 (8-ounce) packages cream cheese, room temperature
1/2 cup (1 stick) butter, room temperature
2 cups powdered sugar
1/2 cup canned sweetened cream of coconut (such as Coco LĂłpez)**
1 teaspoon vanilla extract

Instructions:
Beat cream cheese in medium bowl until fluffy.  Add butter and beat to blend.  Then add sugar, cream of coconut and vanilla extract and mix until blended.

After frosting the cupcakes, garnish them with cherries, fresh pineapple and shredded coconut! 


**Canned sweetened cream of coconut is available in the liquor section of most supermarkets nationwide.
*Also, if possible, I recommend making the frosting the day before and refrigerating overnight.  It becomes much thicker and easier to work with.

Ugliest Shoes Ever




Did you ever beg your parents to buy you something as a kid? Maybe it was a pair of designer jeans, a hot pink two piece bathing suit, a pair of impractical shoes or a petticoat.  (I'm answering yes to all of the above.)

When I was in the seventh grade, I begged my mom for a pair of mint green Sam and Libby tennis shoes. She warned me they would match nothing and they didn't.  But still, I had to have them.  She bought them for me and my friends and I took turns taking pictures of each other modeling them individually. True story.  They were pretty awesome.

Last week, I had a weak moment as a mom.  I went into a shoe store to see if they carried kids shoes and immediately, each of my boys found a pair of shoes they just had to have.  While I was reluctantly helping Luke try on his coveted Star Wars light up shoes, Jett managed to find (and put on) a pair of "handsome" red leather Lightening McQueen shoes.  Yes, they were coincidentally his perfect size.

So there I was, sitting on the floor of Famous Footwear, watching my kids run up and down the aisle wearing light-up shoes that were clad with cartoon characters.  Not exactly what I had in mind for them.  Don't they know those are NOT what the cool kids wear?

But then something happened.

I got lost in their smiles and their laughter and their pure joy over the "coolest shoes ever."  The ones they "want to wear forever."  And I thought to myself, "Well, apparently they've inherited my love for shoes darnit"  If I were sitting here with a little girl, would I deny her a pair of these or these?  Absolutely not! And I thought back on all the "impractical" shoes in my own closet.  The bright orange pumps, the red patent leather flats, the black and white wedges...the list goes on and on and on.

And when the sales clerk looked at me skeptically and asked, " What do you think of the shoes?  Do you like them?"  I replied, "No, they're pretty much the ugliest shoes I've ever seen but I'll take both of them."

$74.00  later, we all went home happy and the boys have modeled their shoes proudly ever since.  It was a frivolous purchase but one I will never forget.  Not because the shoes are so ugly but because the boys were absolutely over the moon and it doesn't get much better than that.

Going Gidget




Anyone else grow up watching Gidget movies?  My sisters and I loved these movies but my favorite was the original Gidget, played by Sandra Dee.  Definitely an all American girl!

These movies are full of summer fun and lots of beach inspired looks too.  Whether she was learning to surf or hanging out at the evening luau, "Gidge" was always sporting some cute attire.

Fourth of July Kabobs


Is everyone excited about tomorrow?  I know I'm looking forward to hanging out with friends, indulging in some yummy food and splashing around in the pool.

I made these sweet little fruit kabobs for the boys yesterday as we were decorating in red, white and blue.  To make the grapes stand up, simply cut of the bottom of the grape to make it a flat surface.  The white pieces are yogurt covered raisins.  Of course you could also use strawberries but I didn't have any on hand.

Flag Etiquette




Independence Day is proudly approaching and there's nothing I love better than seeing flags displayed around town for the holiday.  I love the fourth because it's really just one big party.  The food, the comaraderie , the fireworks, the parades....

I thought it would be appropriate timing for a few reminders when it comes to flying Old Glory.  Let's make her proud this week!
