Hoppin' John Stew & White Cheddar Grits

Can you believe 2012 is coming to an end?  I'm always excited to welcome a new year but tend to get a little sentimental about saying farewell too. Last night as I tucked Luke into bed, we talked about today being the last day of 2012.  Why is it that time seems to speed up with age? Does it ever slow down again?

Nevertheless, time continues and so do traditions.  Like so many other southern traditions, eating black eyed peas and greens to ring in the new year dates back many, many years.  It's believed that the black eyed peas bring luck and prosperity while the greens bring wealth and fortune.  We cook a traditional peas and greens meal on New Years Day but today I'm sharing an alternative way to enjoy this wonderful southern tradition!

This hoppin' John stew is so flavorful and relatively healthy considering it includes lean deli ham vs. bacon or ham hocks.  It's quite hearty and would make a great meal if you're entertaining a crowd on New Years Day.  (Don't forget the mimosas!)  I can't wait to ring in 2013 and wish all of you a happy and healthy new year!

***** Hoppin' John Stew with White Cheddar Grits **************************************
         
Serves 4-6  (adapted from here)

// Ingredients //

4 tbsp. butter, divided
1/4 lb. deli ham, sliced and diced
1 medium onion, chopped
2 garlic cloves, diced
1 cup grape tomatoes, halved
1 can corn (11 oz.)
2 can black eyed peas, (15 oz.)
1/4 cup cilantro, chopped
1 cup kale, chopped
Grits, cooked according to package
1 cup shredded white cheddar
2 tsp. salt, divided

// Instructions //

1.  Melt 1 tbsp. butter in a large stock pot.  Add onion and garlic and saute over medium heat until translucent.  Then add tomatoes, corn, black eyed peas, kale and 1 tsp. salt.  Cover, reduce heat and stir occasionally for 15 minutes.

2.  Meanwhile, cook grits according to the package.  Add, 3 tbsp. butter, 1 tsp. salt and 1 cup white cheddar grits.

3.  Remove Hoppin' John Stew from heat and add cilantro.

4.  Serve grits and top with stew.  Then add diced ham.  Serve and enjoy!

Weekend Cheers: 12 Cocktails of 2012


Hi friends!  How was your holiday?  Our Christmas was spent with family and I can't wait to begin the second round of festivities when my little sister arrives from Baltimore tomorrow.  We still have a lot of celebrating to do and of course the new year is just around the corner.  There are few things I love more than ringing in a new year.  Who's with me?

It's kinda become our tradition around here on Fridays to toast the weekend with a new cocktail but today I want to reflect on some concoctions I shared around the blogesphere in 2012.  It's nice to have them all bundled up like this in one place so I hope you'll enjoy the recap.  Of course, all my other cocktail creations that we've enjoyed here on YSP can be found in the recipe file above for quick reference.

Coconut Lime Bars



Hello friends.  Thank you for being here with me today.  I know many of us are hurting and still feeling a ranch of emotions from the tragedy of last Friday.  For days, I could not bring myself to watch the news.  It was just too heart breaking and too close to home.  Even still my exposure to the news is limited.

It's time like these that I cling to the simple things.  Cherishing and holding on to every laugh. Stealing every hug and kiss I can get my hands on.  Sitting in the carpool line and seeing their smiling faces turn that corner.  Cleaning up the kitchen after time well spent baking cookies with loved ones.  I know that this time of year is typically spent with family and friends but this year, in honor of those little ones, let's  linger a little longer, hug a little tighter and smile a little brighter.  We owe it to them.  We owe it to our loved ones.  If any good thing can come of this tragedy it's that none of us take another day for granted.

This past weekend I got the urge to bake.  It just felt comforting to me.  The boys watched movies, we listened to Christmas music and were lucky to have my mom (Grammy) staying with us.  I wanted something fresh and light so I made these coconut lime bars and the boys gobbled them up quickly. These day to day things we do as humans seem so insignificant but they're not.  These are the moments we hold on to when we have nothing else.  I pray that everyone who is missing a loved one this holiday season will find a way to hold on to those precious moments.   Those simple moments that make up life as we know it.

*****Coconut Lime Bars*************************************************************
(adapted from Martha Stewart)

// Ingredients //

1/2 cup unsalted butter, room temperature plus more for greasing pan
1/2 cup packed brown sugar
1 cup granulated sugar
3 large eggs
2 cups all purpose flour (spooned and leveled)
1/2 tsp. salt
1/2 cup chopped macadamia nuts
1 tbsp. finely grated lime zest
1/2 tsp. vanilla extract
1 package (7 oz.) sweetened shredded coconut

// Directions //



  1. Preheat oven to 375 degrees. Butter a 9-inch square baking pan; line with parchment, leaving a 2-inch overhang on two sides. Butter parchment. In a large bowl, whisk butter, brown sugar, and 1/3 cup granulated sugar. Add 1 egg; whisk until smooth. Stir in 1 cup flour, salt, nuts, and lime zest. Spread batter in pan. Bake until top is set and very light golden, 15 to 18 minutes.
  2. Meanwhile, in a medium bowl, whisk together 2/3 cup granulated sugar, 2 eggs, and vanilla. Reserve 1/2 cup coconut; stir remaining coconut and 1 cup flour into egg mixture. Gently spread over base; top with reserved coconut. Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 25 minutes. Let cool completely on a wire rack. Using parchment, lift cake from pan and cut into 24 bars.

Hello friends!  Am I the only one who feels like December is moving at warp speed? (Please say no.)

To kick off the weekend, here's a delicious cocktail inspired by the traditional southern side dish known as ambrosia.  Are there any ambrosia lovers out there?  Ambrosia is a traditional and simple southern side dish consisting of oranges and fresh coconut.  Some may "dress up" their ambrosia with pineapple, marshmallow or cherries but it's really just a matter of personal preference.  I've never met an ambrosia I didn't like and couldn't resist blending these flavors into a Christmas cocktail that's both sweet and southern.

*****Ambrosia Cocktail*****
(serves 1)

// Ingredients //

2 oz. Coconut Rum (like Malibu)
1 oz. Orange Juice
1 oz. Pineapple Juice
Grenadine (splash)
Mini Marshmallow, Cherries and Rosemary for garnish

// Instructions //

Fill a highball glass with ice.  Then, add rum, juices and grenadine and stir.  Then garnish with marshmallow, cherries and rosemary for a festive touch!

Cheers, it's the weekend! Although I've been under the weather a LOT lately, I did have time to whip up this wonderfully festive cocktail last week when I was feeling a bit healthier. I discovered the coquito while searching for alternatives to traditional eggnog drinks and dare I say... I like it better than eggnog? Coconut milk, rum and spices are mixed into a creamy cocktail that would be the star of any cookie exchange or holiday party. The coquito originates from Puerto Rico and is traditionally served at the holidays. Often times it's referred to as the "Puerto Rican eggnog." Serve it cold or over ice in small cordial glasses or mason jars as an after dinner drink. Happy Holidays and Feliz Navidad!

***** Christmas Coquito ****************************************************************************
(serves 8-10)

1 can cream of coconut
6 ounces coconut milk
2 12 ounce cans evaporated milk
1/2 teaspoon grated lime rind
1 pinch salt
1/4 teaspoon fresh ground nutmeg
2 cinnamon sticks, broken into smaller pieces
2 cups rum

***** Instructions *************************************************************************

1. Mix all ingredients (excluding the rum) in a large bowl. Add rum to taste.
2. Transfer the mixture to a glass bottle and refrigerate for 24 hours to allow the flavors to develop. Serve chilled in small sherry glasses and garnish with fresh ground nutmeg.

Five Soups for Winter












How was your first December weekend?  We finally finished decorating for Christmas despite Jett and I being on the mend from our winter colds.  While the weather was perfect here in Georgia this weekend, I think I'm ready for some cooler temperatures that require heavy socks and piping hot soups.  Severely cold weather doesn't threaten us too often but when it does, I'm gonna be prepared with these hearty soup recipes.  Don't they look just scrumptious?

Wouldn't shopping be so much fun if it looked like this?  Semi crowded streets, fashionably dressed (and probably polite) fellow shoppers, a glorious tree and a Parisian backdrop.  Truthfully I avoid Christmas shopping in public at all costs during the holidays but I do love a good online splurge from the comfort of my own home.  I'll be clicking away today grabbing up a few goodies and I'm looking forward to enjoying the Christmas tree and a cozy fire this evening with the boys.   I'll also be putting the finishing touches on a fun gift guide I've been working on for the blog.  Happy Shopping!

Cheers, it's Friday!  How in the world is it almost Thanksgiving?  I've been living in what feels like a tunnel for the last two weeks due to an ear infection but thankfully, I'm on the mend and looking forward to celebrating the weekend with a festive cocktail.

Normally you won't find me drinking whiskey but I really, really like this drink.  There's something about Thanksgiving and the height of football season that just makes whiskey an appropriate choice. The addition of fresh cranberries makes this drink magnificent! So, consider this a Thanksgiving toast from me to you.  I'm truly thankful for each and every one of you, your comments and your support.  I love sharing this space with you and consider this blog as one of my sanity savers.  So thank you, my fellow peaches.

// Cranberry Whiskey Cocktail //
makes 1 drink

1 oz. Crown Royal whiskey
1 oz. ginger ale
1 oz. cranberry juice
Fresh Cranberries for garnish

// Instructions //

In a cocktail shaker filled with ice, combine liquids and stir.  Then strain over ice into a rocks glass. Garnish with fresh cranberries.


Domestic Delights
