Irish Potato Pizza




With St. Patrick's Day right around the corner, I wanted to try this recipe for Irish Potato Pizza that I've been eyeing for some time now. It's not your typically sauce and cheese pizza found here in the US. I'd say it favors more traditional pizza you might find in Italy. This pizza can certainly act as a main course but can double as an appetizer too. It works well for large crowds if you plan entertaining on St. Patrick's Day. I suggest pre-slicing to make it easy on your guests. To simplify the recipe, I opted for fresh ready-made pizza dough from Publix which you can find in their bakery section in small refrigerator. You still have to roll it out but it's a huge time saver and quite delicious too! Feel free to follow my recipe step by step or get creative with your own additions.

***Irish Potato Pizza***

// Ingredients //

1 pizza dough
3-4 golden potatoes, cleaned and peeled
4 oz. fresh mozzarella cheese
4 tbs.olive oil, divided 3/1
1 tbsp. fresh rosemary
1/2 teaspoon salt
1/2 teaspoon pepper

// Instructions //

1. Peel and slice potatoes very thinly, almost transparent. You can use a chef's knife or preferably a mandolin. Set slices aside in a bowl and soak them in cold water for about an hour to remove excess starch and prevent discoloration. Then drain potatoes in a colander and sprinkle them with 1/2 teaspoon salt.

2. Roll out pizza dough according to package directions. Then brush the crust with 3 tbsp. of olive oil. (you may need more or less olive oil depending on how large you roll out your dough.)

3. Toss potatoes in remaining 1 tbsp. olive oil. Then add slices to the pizza crust in a thin even layer. Then evenly crumble pieces of fresh mozzarella across the pizza.

4. Sprinkle with fresh rosemary and pepper. Bake at 450 degrees for about 18 minutes or until edges of crust are golden brown.
