It's about this time of year I start dreaming of my summer garden. Fresh tomatoes, peppers and herbs. This tomato feta dip really answers my craving for a savory taste of summer but is still comforting enough to serve in cooler months. We had some friends over for dinner this past weekend and needless to say this platter was clear by the end of cocktail hour. It's a simple appetizer that can be made ahead of time and requires no cooking. Love that! Just make sure to pick up a loaf of fresh baked bread from your local grocery. It's really the perfect thing to soak up all those delicious flavors of the olive oil and Greek seasoning.
***** Tomato Feta Dip *****
(serves 6 - adapted from Clover Lane)
// Ingredients //
1 package red grape tomatoes
1 package yellow grape tomatoes
1 bunch green scallions, green parts only
1/3 cup feta cheese, crumbled
Cavender's all purpose Greek seasoning
olive oil
1 baguette, sliced
Large platter for serving
// Instructions //
1. Cut tomatoes into quarters and dice green scallions (green parts only.)
2. Combine tomatoes, scallions and Greek seasoning and stir. Then gently fold in feta cheese.
3. Cover the bottom of the platter with a thin layer of olive oil. You want to make sure you keep the oil extremely shallow so that you don't make the dip too soupy.
4. Then carefully spoon tomato feta dip on top of oil and serve with sliced baguette pieces.
