Creamy Chicken and Rice Bowl


What's for dinner? I ask myself this question...a lot. So much that I even started a Pinterest board titled, "What's for dinner?" I cook a lot without a recipe and am a big fan of "making something out of nothing" but sometimes I need a little help making it all come together. This creamy chicken and rice bowl cooks up super fast and with a little assistance from Progresso Recipe Starters, the result is something similar to a risotto without the time commitment. The kids love this recipe because it has their favorite veggies, carrots and broccoli (or as we call it, green sprinkles!) And I love it because it's a dish that everyone will eat which saves me from acting as a short order cook. On a side note, this is a great dish to practice your chopstick skills. Just in case you're looking to add some good family fun.

*** Creamy Chicken and Rice Bowl ***

// Ingredients //

2 tablespoons olive oil, divided
1 tablespoon butter
1/2 cup diced sweet onion
1/2 cup crinkle cut carrot slices
1/2 cup finely chopped broccoli (i.e green sprinkles)
3 cups prepared basamati brown rice
3/4 pound boneless chicken breast cut into cubes
1 package Progresso Recipe Starters creamy roasted garlic flavor
salt and pepper to taste

// Instructions //

1. Cook rice according to package directions. (This step can be done in advance to save time!) While your rice cooks, prepare your veggies and chicken as follows.
2. Heat 1 tablespoon butter in a large skillet. Add cubed chicken and 1 teaspoon of salt. Cook chicken over medium low heat for 6 minutes. Then add entire contents of Progresso Recipe starter sauce to cubed chicken and simmer over low heat for about five minutes.
3. While your chicken simmers heat 1 tablespoon olive oil in a large wok. Add onion and carrots and saute for five minutes or until onion is translucent. Then stir in broccoli and rice.
4. Add chicken and sauce mixture to veggies and rice and combine. Simmer for 3 minutes. Serve in a rice bowl alongside a pair of chopsticks and enjoy!
